This 7UP Cake recipe is super moist, with a tender crumb and lots of bright citrus flavor. Boxed cake mix makes it a cinch!

A Southern Classic That Comes Together in a Snap
7UP Cake is such an easy cake recipe because I have a secret: I make it with a box cake mix. Shhhhh….don’t tell anyone. It can be our secret. They will NEVER know!
It’s THE moistest, most flavorful, EASY to make bundt cake recipe—ever! If you’ve never had it before, the 7UP just adds a little zest to the flavor and some sweetness—but not too much. It’s perfect!

Ingredients
See the recipe card below this post for ingredient quantities and full instructions.

The cake
- Yellow Cake Mix – Duncan Hines and Betty Crocker are great choices for a quality cake mix that tastes homemade!
- Lemon Instant Pudding Mix – Instant Pudding helps keep the cake moist.
- Eggs
- Wesson Canola Oil – I like using Wesson because it’s a classic, light oil that provides moisture and has a good taste in a cake
- 7UP Soda – I’ve thought about adding Cherry 7up in the cake, but haven’t tried it yet. (Did you know you can make biscuits with 7UP too?! Try my 7UP Biscuits. Or, enjoy my orange soda cake for more soda-infused treats.)
The glaze
- Powdered Sugar
- Milk
- Lemon Juice
How To Make 7UP Cake

1. Prepare: Preheat the oven to 325ºF and grease a Bundt pan well. Make sure you get all the little nooks and crannies!
2. Make the Cake: Add the cake mix and lemon pudding mix into a large bowl. Beat in the eggs. Add Wesson oil, 7 Up, and stir to combine.
3. Add to Prepared Pan: Pour in the greased Bundt pan and bake for 40-45 minutes.
4. Cool and Glaze: Allow to cool completely and top with glaze.

Storage
Keep your 7UP Cake in an airtight container and store it at room temperature for up to 4 days. If you have smaller portions, you can wrap them in plastic wrap.
This 7UP Cake freezes well too! Wrap it tightly and freeze it for up to 3 months. Let it thaw at room temperature before serving.

This cake is fantastic I have made this 5 times already
I made this for a friends birthday! Hope she likes it. I wish I could add a photo. It came out really pretty and I garnished it with sliced lemons.
I made this for a last minute family dinner and made some substitutions with what I had in hand. I used white cake mix, sprite, coconut oil and raspberry jello. It was amazing and tasted just like a raspberry zinger!

I could not find any large box of lemon instant pudding and two small boxes were over the ounces for a large box. Trying this with one small box of instant pudding. Has anyone else done this? In the oven now. PS – recipe still does not indicate “instant” pudding.
Yes, it’s instant pudding. How did it turn out for you?
Nick-
I ran into the same issue. I used the small box & I only used one. I’ve gotten numerous compliments on it so it tastes pretty darn good!
I always use 1 small box of lemon instant pudding – turns out perfect & delicious.
Great recipe! Cake comes out moist and so delicious!!

Made this yesterday and it was sooo good! I love that it was quick to make, and that it also lived up to what was being said…which was that this cake was very tasty!

Hi! For a really lemony taste, can I use a lemon cake mix instead of yellow?
Hello, does anyone know of this would work with strawberry jello instead of the pudding mix?
I just made this for a coworkers birthday and it was a hit with the whole office!
Do you use instant pudding mix, or regular pudding mix?
instant pudding mix. 🙂
I made this cake for a party at my job a few weeks ago. It came out great! The cake was full of flavor and still moist. It was such a hit that I have since made it three more times.

Hi Kasey. It doesn’t say if it’s instant or the cooked kind of pudding. Can you please elaborate?
Yes! It’s instant pudding. I’ll change the recipe, thanks!
