A Southern Classic That Comes Together in a Snap

7UP Cake is such an easy cake recipe because I have a secret: I make it with a box cake mix. Shhhhh….don’t tell anyone. It can be our secret. They will NEVER know!

It’s THE moistest, most flavorful, EASY to make bundt cake recipe—ever! If you’ve never had it before, the 7UP just adds a little zest to the flavor and some sweetness—but not too much. It’s perfect!

The cake

  • Yellow Cake Mix – Duncan Hines and Betty Crocker are great choices for a quality cake mix that tastes homemade!
  • Lemon Instant Pudding Mix – Instant Pudding helps keep the cake moist.
  • Eggs 
  • Wesson Canola Oil – I like using Wesson because it’s a classic, light oil that provides moisture and has a good taste in a cake
  • 7UP Soda – I’ve thought about adding Cherry 7up in the cake, but haven’t tried it yet. (Did you know you can make biscuits with 7UP too?! Try my 7UP Biscuits. Or, enjoy my orange soda cake for more soda-infused treats.)

The glaze

  • Powdered Sugar
  • Milk
  • Lemon Juice

How To Make 7UP Cake

1. Prepare: Preheat the oven to 325ºF and grease a Bundt pan well. Make sure you get all the little nooks and crannies!

2. Make the Cake: Add the cake mix and lemon pudding mix into a large bowl. Beat in the eggs. Add Wesson oil, 7 Up, and stir to combine.

3. Add to Prepared Pan: Pour in the greased Bundt pan and bake for 40-45 minutes.

4. Cool and Glaze: Allow to cool completely and top with glaze.

Storage

Keep your 7UP Cake in an airtight container and store it at room temperature for up to 4 days. If you have smaller portions, you can wrap them in plastic wrap.

This 7UP Cake freezes well too! Wrap it tightly and freeze it for up to 3 months. Let it thaw at room temperature before serving.

Ingredients  

7UP CAKE

  • 1 box Yellow Cake Mix
  • 1 3.4oz INSTANT lemon pudding mix
  • 4 eggs
  • 3/4 cup Wesson oil
  • 3/4 cup 7 Up

GLAZE

  • 1 cup powdered sugar
  • 4 TBS milk
  • 1 TBS Lemon juice

Instructions 

  • Add cake mix and 1 large box Jell-O lemon pudding mix into a large bowl
  • Add eggs, and beat well.
  • Add Wesson oil, 7 Up – Stir to combine.
  • Pour in a greased bundt pan and bake at 325 degrees for 40-45 minutes.
  • Allow to cool and top with glaze.

GLAZE

  • Mix all ingredients together and drizzle over cake.

    This is a hit at my house. Follow the recipe and the cake turns out great. When making the icing I only add enough milk to make it the consistency I want. It is thin if you add that much liquid. So easy and so tasty.

    The recipe ingredients say a 3.4 oz. lemon pudding mix, which is a small box. The instructions say add 1 large box of lemon pudding mix. Which is it?

      I had the same question. I just used the small, 3.4 oz box and it came out great.
      I also tried it with vanilla pudding and used Fresca (grapefruit soda) and fresh grapefruit juice and zest. It was excellent!
      Today I’m going to try Ginger Ale with a little grated ginger and a pinch of cardamom, using vanilla pudding mix.
      What a fun recipe to play around with.

    someone gave me a similar recipe which I have made and it is good; only it replaces the 7 up with water……. I wonder what difference the 7 up makes is this cake??

    This cake looks amazing and I want to make it. Is the 4 eggs too much though? I’ve never baked a box cake that takes four eggs.

      I used Baja Flash Mt Dew and it worked as well even diet pop should work with boxed cake mix . Dark pop for chocolate cakes and light colored pop for white yellow strawberry cakes. WW used diet in their recipes to save calories . Pop is a great cake mix hack
