This crescent roll breakfast casserole is a delicious way to feed a big group of people and it’s just as easy as my top-rated Easy Breakfast Casserole! Simply layer crescent rolls, sausage, cheese, and eggs in a baking dish, and bake until golden brown. Boom! Your work is done.
The crescent rolls provide a fluffy, buttery base, while the eggs, cheese, and sausage make this recipe hearty, satisfying, and full of flavor. Truly, the hardest part is waiting for it to finish baking!

My Tips for a Perfect Crescent Roll Breakfast Casserole
This recipe is easy, but I’ve got a few pointers to help you make sure it turns out perfect!
- Make it without pork. If you prefer, you can use turkey sausage or chicken sausage. Since these types of sausage have less fat, add oil to the skillet before browning them.
- Use whole milk. Reduced fat (2%) milk will work in a pinch, but I would not use anything lower in fat than that. Whole milk will make this crescent roll breakfast casserole rich and creamy!
- Pinch together the seams on the crescent roll dough. This keeps the egg mixture from seeping underneath the crust.
- Don’t panic if it deflates. Egg casserole puffs up in the oven and always falls a little bit as it cools. This is fine and not a sign that the recipe didn’t work or that you did anything wrong!

Variations
- Use crumbled bacon instead of breakfast sausage for the protein.
- Leftover ham from my Crock Pot Ham recipe can also be used instead of sausage.
- You can switch things up by using a different variety of shredded cheese. Try smoked mozzarella cheese or gouda cheese!
- After the sausage has cooked, toss some chopped veggies into the hot, greased skillet. Zucchini, tomatoes, and sliced peppers are all delicious and can be quickly sautéed and sprinkled into the casserole dish with the sausage.
How to Store Crescent Roll Breakfast Casserole
To store leftovers, warp the casserole dish with plastic wrap or aluminum foil. Or, transfer the casserole to an airtight container. It will stay fresh in the refrigerator for up to 4 days.
To freeze your casserole, cover it with plastic wrap followed by aluminum foil. Or, transfer it to a freezer-safe container. It can be frozen for up to 2 months. Thaw in the fridge overnight before warming.
To serve, reheat leftovers in the oven at 350ºF until warmed through. If the top of the casserole begins to brown, cover the dish with foil, and continue to bake until your desired temperature is reached.

Ingredients
- 1 pound bulk pork sausage
- 1 tube refrigerated crescent rolls 8 oz
- 2 cups shredded cheddar cheese
- 8 large eggs
- 2 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 375°.
- In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain.1 pound bulk pork sausage
- Unroll crescent roll dough into a greased 13×9-in. baking dish. Seal seams1 tube refrigerated crescent rolls
- Add sausage and top with cheese.2 cups shredded cheddar cheese
- In a large bowl, whisk eggs, milk, salt and pepper. Pour over sausage and cheese.8 large eggs, 2 cups whole milk, 1/2 teaspoon salt, 1/4 teaspoon pepper
- Bake, uncovered, 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

I try to cut down on the fat content in breakfast casseroles to make them healthier. Why whole milk? Would 2% work?
Whole milk just makes it richer and creamier! You could use 2% – the flavor just won’t be quite as strong.
I have always made mine with hash brown patties. I will be making this recipe this year for our Christmas morning breakfast for my family at my sisters house.

I just googled you can let sit in fridge over night and it will even bring the flavors together. It was for breakfast casseroles.
I make one like this. Add green chilis over the meet. Makes it extra yummy!!
