Whether you know it as green goop, pistachio fluff salad, green fluff, or Watergate salad, there’s one thing no one can argue: pistachio salad is delicious! If you’ve ever had ambrosia salad before, this is similar. It’s a creamy, dreamy mixture of fruit, nuts, and marshmallows that’s always a crowd-pleaser.

Every family seems to have their own version (and name for) pistachio salad. This is the recipe I grew up eating at potlucks and family get-togethers. And now it’s my go-to whenever I’m asked to bring a side dish to share. Once you give it a try, it might be your favorite pistachio salad recipe too!

My Tips for Pistachio Salad Perfection

There’s really not much to this recipe, which is why I love it! But here are some additional pointers to make sure it turns out perfect for you.

  • Don’t be afraid to make it your own. My version is a mix of chopped nuts, pistachio pudding (hence the name!), canned pineapple, mini marshmallows, and Cool Whip. Sometimes other ingredients like maraschino cherries, grapes, or shredded coconut are added in as well. If you want to mix things up and make this Watergate salad recipe your own, go for it!
  • Use the juice from the pineapple. Don’t drain it off! You’ll mix it right into the salad, which infuses the whole shebang with fantastic sweet-and-tangy tropical flavor.
  • Get a head start. You can make pistachio salad the night before; some people even prefer it after it’s had several hours to thicken up in the fridge. Cover the salad with plastic wrap and keep it chilled until you’re ready to enjoy it.

How to Store Pistachio Salad

You can make pistachio salad ahead of time and store it in the fridge for up to 3 to 4 days. Simply cover the serving bowl with plastic wrap or store it in an airtight container and keep it in the refrigerator until you’re ready to serve.

You can also freeze this salad for up to 3 months, but the texture is best when fresh. If you do decide to freeze it, simply thaw it in the fridge overnight and give it a stir before serving.

Serving Suggestions

Serve pistachio salad as a side dish like other Jello salads, or enjoy it as a dessert since it’s so sweet. It’s perfect for potlucks, picnics, and barbecues because you can make it ahead of time! Ingredients  

  • 1 3.5oz box instant pistachio pudding mix
  • 1 20oz can crushed pineapple
  • 1 cup miniature marshmallows
  • ½ cup pecans toasted and chopped
  • 8 oz Cool Whip thawed

Instructions 

  • In a medium mixing bowl, combine the pudding mix and crushed pineapple (with the liquid) and stir to combine.
  • Stir in the marshmallows and pecans.
  • Fold in the Cool Whip.
  • Refrigerate for one hour before serving.
