But, If you’re anything like me, sometimes you don’t know the day before what you want to eat the next morning. I mean, I am human…right?! haha! So, this Easy Breakfast Casserole gives you all the goodness faster! Really, the only difference is that you’re leaving off the crust from the overnight casserole AND you’re not chilling it the night before.

The Best Easy Breakfast Casserole Recipe

You just need to keep a few simple ingredients on hand to whip this baby up anytime you need a dose of comfort! It’s also the perfect breakfast to whip up on Sunday and enjoy during the week with just a little microwave action.

Recipe Ingredients:

For the entire recipe ingredients, see the recipe card below.

  • Sausage – I like spicy breakfast sausage for this recipe, but mild is good if you have littles in your house.
  • Eggs – whisked together
  • Shredded Cheese – I like cheddar but you can use your favorite
  • Frozen Hashbrowns – you can use hashbrown potatoes or shredded. (They’re a key ingredient in my Hashbrown Casserole too!)
  • Milk – whole milk is best.

Substitutions:

  • Breakfast Meat: Ham, bacon, or turkey sausage would be perfect!
  • Potatoes: tater tots or shredded hashbrowns would be fine to use.
  • Cheese: Colby Jack, Pepper Jack, Swiss cheese, or Monterey Jack are good substitutions for the casserole.
  • Milk: Mix it up! Add half and half or heavy cream in place of 1 cup of milk.
  • Veggies: mix in mushrooms, bell peppers, onions, broccoli or spinach.

How To Make Breakfast Casserole:

  1. Prepare: Preheat the oven to 350 degrees.
  2. Brown the Sausage: Crumble sausage into a skillet on the stove and brown completely. Remove from heat.
  3. Whisk the Eggs: In a large bowl, mix eggs and milk together and whisk well.
  4. Add seasonings: Add salt and pepper to the egg mixture and stir.
  5. Mix ingredients all together: To a 9×13 dish sprayed with cooking spray, add frozen hashbrowns, sausage, and cheese.
  6. Add to the baking dish: Pour the egg/milk mixture into the dish.
  7. Bake: Bake at 350 degrees for 45 minutes – covered with foil.
  8. Rest: Remove the foil and bake for about 10-15 minutes more until the dish is bubbly and cheese is melted.

Make ahead: You can easily make this casserole the night before and bake in the morning. Just cover in the fridge and take out while your oven is preheating. You may need to increase the baking time by 10-15 minutes.

Baking Tip: This casserole is done when the edges are set and lightly brown and the center only jiggles slightly. Make sure there is no “watery” eggs in the center before removing from the oven.

Storage: Cover the entire casserole with foil or a lid to your baking dish and refrigerate for up to 3 days.

Reheat: Reheat in the microwave.

Freeze: This casserole can be frozen. First bake your breakfast casserole and once it has completely cooled, place in an airtight container or ziplock bag. When ready to warm up, place in oven and bake at 350 degrees until warmed through about 20 to 25 minutes.

Ingredients  

  • 1 pound Sausage
  • 6 Eggs
  • 2 cups Milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 package Frozen Hashbrowns 15oz
  • 2 cups Cheddar Cheese shredded – I like cheddar but you can use your favorite

Instructions 

  • Preheat the oven to 350 degrees.

    I used 1/2 of all ingredients (except eggs, I used 4) as there are only of us now. I also added a 1/4 cup each of green bell pepper and green onion to the sausage when it was almost done cooking and about a teaspoon of seasoned salt added to the egg mixture. I baked in a 9″ square casserole dish, covered for 30 minutes and uncovered for another 10 minutes. It turned out delicious and my husband and I ate the entire casserole. This will be going into my “My Favorite Recipes” binder.

    Mine took longer to cook too but it could be my oven as this has happened with other egg bake recipes I’ve tried. I do think I’ll use a little less milk next time though and may cook at a higher temp. This tasted wonderful and the family liked it. I sautéed finely diced half of a small onion with the sausage. I also added fresh raw broccoli chopped small and it cooked nicely. Great recipe that is easy to mix up in different ways. Thank you!

    Made this for Christmas bunch today. It was delicious and got gobbled up! I did add 4 more eggs, as I was feeding 8 people and thought it could use a few more. I also sauted half an onion and a half of a sweet red pepper and added to the egg mixture. Big hit! I’ll use this recipe every year from now on!

    I don’t like frozen hashbrowns so I used a half a bag of tater tots instead. I also added dried onion flakes. Probably the best breakfast casserole I’ve made. Will definitely be my “go to” breakfast casserole from now on.

    I’ve been making this recipe now for almost a year. My family requests it for every get together! I use “Simply Potatoes” from the refrigerated dairy section and use the entire 15 oz pkg and keep the remaining ingredient measurements the same. It’s absolutely delicious!

    Great question can i put it together 2 days in advance and leave in frig ? First time made day of was delicious? One place looked to say one night before another showed not to do that thinking 2 days might be soggy

      I wouldn’t prepare the assembled casserole in advance. You can brown the sausage in advance (the night before), then it’s just a dump and mix together in the morning and bake. I use “Simply Potatoes” from the dairy section vs frozen hash brown potatoes. It literally takes less than 5 mins to mix this together, then bake as directed.

      We recommend only leaving it unbaked for one day. Any longer than that, and it’s likely to start becoming soggy!

    This casserole was great. I used 7 eggs, just 1 cup of diced potatoes (obrien) and 1and 3/4 milk and 1 3/4 cheese (monterey jack). I cooked at 350 for 45 min but increased the temp to 360 for the last 15 min. Its very versatile and have been considering different additions like diced tomatoe..but overall its 5 stars from me – love how filling it is.

    My question is.. can you refrigerate leftovers for the next day? Or is freezing necessary?

    You say use frozen hash browns. How? They’re all in a lump, frozen together. Do I take a hammer & smash them apart? Doesn’t make sense. Do you mean ‘thaw package of frozen hash browns & use’? Obviously I’m not an experienced cook, and I would venture to say there are at least a few out there like me.
