I am sharing my favorite tips for making boxed pancake mix taste as good as pancakes made from scratch. With a few tweaks and tricks, your boxed pancakes will be out-of-this-world delicious!

How To Make Pancake Box Mix Better
We all love a good pancake breakfast. It is hard to resist those warm, fluffy stacks drenched in syrup, maybe with a little butter sliding down the sides. It is pure morning happiness in food form. But most of us don’t have time to make pancakes from scratch on a weekday morning. That’s where trusty boxed pancake mix comes in.
With a few easy tricks, you can doctor up that pancake mix and make it taste like the pancakes you order from a fancy breakfast bistro! With these tips, you will never have to settle for basic, bland pancakes ever again.ย
1. Swap Water for Milk (or Buttermilk)
Box pancake mix instructions usually call for water to be added to the dry mix, but water’s boring and honestly flavorless. Instead, use any kind of milk or go all-in with buttermilk for richer, creamier pancakes with that from-scratch taste.
Buttermilk, in particular, gives you that diner-style fluff and depth of flavor you just can’t get from water. If you don’t have any on hand, mix a tablespoon of white vinegar into regular milk and let it sit for about 5 minutes to thicken. 2. Add an Egg to The Batter
Some boxed pancake mixes are “just add water,” but a real pancake almost always has eggs. Adding an egg, or even two if you’re doubling the mix, will help make those pancakes extra rich and also stronger, making them less crumbly or hard to flip.
Whisking in an egg will give you pancakes that are fluffier, more golden, and way more satisfying than their eggless counterparts.
3. Melt in Some Butter
A tablespoon or two of melted butter in the batter adds that rich, homemade flavor you know and love. It also helps the pancakes brown beautifully and adds a little crispness to the edges. Just whisk in the eggs with the water (or buttermilk!), and you will be amazed by the difference.ย
4. Sweeten It Up
Boxed pancake mix is usually pretty neutral in flavor, which is fine but not fabulous. Adding a little bit of vanilla extract along with a tablespoon of sugar to the batter will make a massive difference. You can even use honey or maple syrup to your box mix pancake batter. These sweet additions won’t turn the pancakes into dessert but will just enhance the overall flavor.
You can also stir in a few spices to make your pancake batter taste better. A touch of cinnamon or a little bit of nutmeg does wonders for boxed mix batter and really makes it taste homemade.
5. Add Fruit, Chocolate Chips, Nuts or Anything You Want!
Mix-ins are probably my favorite part of making pancakes, especially when using a boxed mix. They do wonders for making the batter taste homemade! You should think of a plain pancake as a blank canvas that allows you to get a little creative. You can add almost anything you want to that batter and it will be delicious! Just look at my chocolate chip pancake recipe or my best ever blueberry pancakes and you will see that I am obsessed with mix-ins.
Just fold in the mix-ins after the batter is fully whisked and smooth, and then cook as directed on the box. Here are a few of my favorite things to stir into the pancake batter:
- Blueberries, sliced strawberries or raspberries (fresh or frozen)
- Chocolate chips
- Banana slices or mashed banana
- Chopped nuts
- Sprinkles (try matching the color to the next holiday or special occasion!)
Just be careful not to over stuff the batter or there will be more mix-ins and almost no pancake. Mix-ins should complement your pancakes, not weigh them down. For best results, sprinkle your toppings onto the pancakes after pouring the batter onto the hot griddle. That way, those tasty additions won’t sink or scorch.
6. Don’t Overmix the Batter
This tip is a technique tweak rather than an ingredient tip, but it makes a huge difference. When you stir pancake batter too much, you develop gluten in the batter, which makes the pancakes tougher and chewier rather than light and fluffy batter.
To avoid this, mix the batter until just combined. It’s totally fine, even good if the batter is a little lumpy. Let it rest for a few minutes before cooking and you’ll be amazed at how much fluffier they come out when the batter is not overmixed.
7. Cook Pancakes Low and Slow (and Use Butter!)
Pancakes aren’t meant to be rushed. Set your skillet or griddle to medium-low heat and let it warm up properly. Then add a pat of butter to the hot griddle for each batch, not just for flavor, but to help you get those beautiful golden edges.
Watch for the tell-tale signs it’s time to flip the pancakes. Bubbles forming on top and the edges of the pancakes means it is time to flip! Flip your pancakes once and only once for maximum fluffiness. Stack ’em high, serve immediately, and prepare for compliments.
Get Creative With Pancake Toppings
I know I said I had seven tips, but I have one more extra to share: toppings! Syrup is great (homemade syrup is even better), but try adding whipped cream, fresh berries, peanut butter, or a dollop of Greek yogurt on top of your pancakes for a brunchy twist.
You can even go savory with a fried egg, bacon crumbles, and hot sauce. Yes, really. Pancakes can handle it, and adding tasty toppings is a fantastic way to make your boxed mix pancakes taste better.
