Rotel Dip Recipe Ingredients

You only need 3 simple ingredients for this cheesy rotel dip that you probably have on hand!

  • Velvetta Cheese – processed cheese product
  • Rotel Original diced tomatoes – Rotel Tomatoes, are petite diced tomatoes with green chilis and spices. They’re a little spice, almost like salsa! You can get them without spice, too.
  • Sausage – pork sausage ( I like spicy the best!)

If you like spicy recipes, you can also add in some green chiles as well as an extra can of rotel tomatoes. Some people even add in some taco seasoning for a little bit of extra flavor.

How to Make Rotel Dip

This is one of the easiest dips to make…promise! Plus you can add in a few variations to mix it

  1. Brown the Sausage: Cook the sausage in a skillet over medium heat until browned.
  2. Add the Ingredients: Stir in the Rotel tomatoes and cheese, mixing them with the browned sausage.
  3. Melt the Cheese: Continue cooking on low heat, stirring frequently, until the cheese is fully melted and smooth.
  4. Serve: Enjoy with cut-up veggies, crackers, or tortilla chips!

Microwave Instructions

  1. Brown the Sausage : Cook it separately on the stove before starting with the microwave process.
  2. Combine Ingredients: In a microwave-safe bowl, combine the Rotel tomatoes, cheese (Velveeta works best), and cooked sausage.
  3. Microwave in Intervals: Microwave the mixture on high in 1-minute intervals, stirring in between each interval to prevent burning and ensure even melting. Continue until the cheese is fully melted and the dip is smooth (this usually takes about 3-5 minutes total).
  4. Serve: Once melted and well combined, serve the dip with veggies, crackers, or tortilla chips.

Tips + Variations

  • Rotel Cheese Dip with Ground Beef – change up the sausage with lean ground beef for a milder version of this easy Rotel dip, or try ground turkey
  • Rotel Dip with Cream Cheese – you can substitute cream cheese for the Velvetta cheddar cheese in this recipe. It will have a slightly different taste but will still be great!
  • Serve with veggies – Leave the chips in the bag and use chopped-up veggies to serve with this dip instead.

How to Store Rotel Dip:

  1. Let it Cool: Allow the Rotel dip to cool to room temperature before storing.
  2. Transfer to an Airtight Container: Place the dip in an airtight container to keep it fresh.

  4. Reheat Before Serving: To reheat, warm the dip in a skillet over low heat or microwave in 30-second intervals, stirring between each to ensure even heating. You may need to add a splash of milk or water to help it regain its creamy texture.

Note: Avoid freezing Rotel dip, as the cheese can become grainy once thawed.

This dip can also be made in the slow cooker! Just add your browned sausage, cheese, and Rotel tomatoes to a mini crockpot and cook on low for 2-3 hours. Be sure to stir occasionally until it’s melted. Once melted, set the slow cooker to the warm setting so it doesn’t burn.

Can this dip be made in advance?

A great way to keep this easy dip recipe warm after cooking it on the stovetop is to use your slow cooker! Just add the cooked dip to the crock and set on warm.

What toppings work well with this dip?

I like to chop up some green onions as well as add some sriracha sauce to make it more of a medium heat flavoring. You can sprinkle chili powder over the top too.

Are Rotel tomatoes spicy?

Rotel tomatoes come in a variety of heat levels, so you can buy a can that’s made with mild green chilies or one that’s spicy, depending on your taste preferences.

Can Rotel Dip be made in the microwave?

      I made this for my boyfriends family and it was a hit! I was told I should have made one more pan :). I used sweet Italian Turkey sausage instead of beef or pork since I don’t eat that. Still delicious! I also used mild and chunky rotel tomatoes because they didn’t have original. It was still super good.

    What measurement is 1 serving? My daughter loves this dip but is Type 1 diabetic.

      Hi Jill! My son is also T1D, so I speak from years of counting-carb experience 😉. Allow your daughter to have 1/4 to 1/3 cup and treat her only for the carbs in the chips or crackers that she eats with it. This dip would be extremely low carb unless you would use a sweet sausage or some other sweet ingredient that is not listed in Kasey’s recipe. I hope your daughter enjoys it!

    Top 5 Rotel dips!!! Had these for Superbowl. They were a huge hit. Especially when we decided to dip
    Sweet and savory bacon crackers in this Rotel dip. The bacon crackers are almost as easy as the Rotel dip. Cut cracker size bacon strips and put on cracker. Sprinkle Cajun rub, brown sugar, and red pepper flake and bake. This combo was amazing!!! I’ll be making them together from now on!!!

    I use one cream of mushroom soup and add Worcestershire sauce to the meat that you cook in the skillet before you put it in the crockpot it is delicious

        Not cheddar as it will just be clumpy and stringy. Velveeta is creamy and smooth and melts completely.
