This Southern favorite is a staple in my home, especially around the holidays! I make them as an easy appetizer, but also for a quick breakfast. You can mix, roll, and bake them in under 30 minutes! We love how every bite is packed with savory sausage, melty cheese, and a crispy golden crust. They’re even meal prep friendly too!
Tips for Making Sausage Balls
Follow these pointers and your sausage balls will turn out perfect every time!
- Lightly spoon the Bisquick into the measuring cup. Whether you use store-bought or homemade Bisquick, you’ll want to spoon it into the measuring cup rather than scooping, which can compact the Bisquick and give you more than you need. And using too much Bisquick will result in dry sausage balls!
- Make them your own. With such a simple recipe, there are a lot of ways you can put your own spin on it. Use hot sausage or add cayenne for spicy sausage balls, try a different variety of cheese, or replace the Bisquick with almond flour (1 cup) and 1 teaspoon baking powder for a gluten-free, low-carb/keto option.
- Get a head start. Prepare and shape the sausage balls, then freeze them raw. Bake straight from frozen, adding a few extra minutes to the cooking time.

Ingredients
- 2 cups Bisquick
- 4 cups cheddar cheese
- 1 pound sausage spicy
- 1/4 cup milk
Instructions
- Mix together all the ingredients in a large bowl2 cups Bisquick, 4 cups cheddar cheese, 1 pound sausage, 1/4 cup milk
- Form into balls using hands or a small scoop
- Place 2" apart on a baking sheet lined with parchment paper
- Bake in the oven at 350 degrees for 20-25 minutes or until lightly brown

I have made these for many years but with 3 tbs water. Never used milk. May try that next time.
These are chewy in a bad way. I had to throw them away.
We used Red Lobster cheddar biscuit mix instead of the bisquick and these turned out great!
Did you use the same amount of the cheddar bay biscuit mix as it calls for for the bisquick?
Love this recipe! The 2 cups of bisquick and adding the milk…. Well it was money! At my husband’s request, I used 1 cup of sharp cheddar and 3 cups of smoked sharp cheddar (both of which I hand shredded). And it definitely was a good call!! Can’t stop eating them!!

These were SOOOO good and big hit on New Year’s Eve. Crunchy on the outside and soft on the inside. We used jimmy dean hot sausage and it was just enough spice. I’ve used a different recipe in the past that was for 3 cups of bisquick and no milk and they were very dry…not nearly as good as this recipe. Two cups of bisquick is all you need.

These are great. Can they also be made with the Gluten Free Bisquick mix? I have a family member who is gluten sensitive.

Well, you could but they’ll get a little soft – worth a try!
I always keep these warm and serve from crock pot on low or warm setting.
