This Southern favorite is a staple in my home, especially around the holidays! I make them as an easy appetizer, but also for a quick breakfast. You can mix, roll, and bake them in under 30 minutes! We love how every bite is packed with savory sausage, melty cheese, and a crispy golden crust. They’re even meal prep friendly too!
Tips for Making Sausage Balls
Follow these pointers and your sausage balls will turn out perfect every time!
- Lightly spoon the Bisquick into the measuring cup. Whether you use store-bought or homemade Bisquick, you’ll want to spoon it into the measuring cup rather than scooping, which can compact the Bisquick and give you more than you need. And using too much Bisquick will result in dry sausage balls!
- Make them your own. With such a simple recipe, there are a lot of ways you can put your own spin on it. Use hot sausage or add cayenne for spicy sausage balls, try a different variety of cheese, or replace the Bisquick with almond flour (1 cup) and 1 teaspoon baking powder for a gluten-free, low-carb/keto option.
- Get a head start. Prepare and shape the sausage balls, then freeze them raw. Bake straight from frozen, adding a few extra minutes to the cooking time.

Ingredients
- 2 cups Bisquick
- 4 cups cheddar cheese
- 1 pound sausage spicy
- 1/4 cup milk
Instructions
- Mix together all the ingredients in a large bowl2 cups Bisquick, 4 cups cheddar cheese, 1 pound sausage, 1/4 cup milk
- Form into balls using hands or a small scoop
- Place 2" apart on a baking sheet lined with parchment paper
- Bake in the oven at 350 degrees for 20-25 minutes or until lightly brown

I made a 1.5 size batch and I got 70. I might not have made them as big as she did, because according g to the nutritional information at the start it says makes 24.
I got 51 using the 1” cookie scoop. Making for a baby shower brunch on Saturday, so may only make one batch!
I have some short cut’s that make this recipe even better! I use my standing mixer, put cheese 1st and bisquick last so it doesn’t all stick on the bottom! Start on slow using the bread hook. Stop some of the time to scrape the sides. As it begins to mix increase the speed until it is mix well! THEN slowly add the milk,continue mixing until you are pleased! I use the cookie scoop to make the balls. I cook some and freeze some on a cookie sheet! I can pull them out for any reason!
If you freeze them should they be frozen cooked or raw? How long to bake and at what temperature for frozen sausage balls
We recommend freezing them baked. They’ll stay fresh for 3-4 months. To reheat, let them thaw in the fridge overnight. Then, warm in the microwave or in an oven set at 350°F. Hope this helps!

Can you use gluten free bisquick?
Yes! Gluten free Bisquick works great!
I haven’t made Sausage balls before I’m going to try to make it and I pass this recipe to family and friends .I like it . It’s a easy recipe that is something I like.
I made these before with gluten free Bisquick; it worked after I increased the liquid. I can’t remember how much extra milk I used; try about another 1/4 milk.
How do you keep them warm for serving at a party.
You could try keeping them in a crockpot on warm!

I use half Gjost pepper cheese for some of my family. They love them spicy.
Hi! How do you store these once cooked?
Nope, don’t need to cook the sausage before hand. You want to mix the sausage in raw, so it combines with the bisquick mix. I like to mix my bisquick and sausage together well first to ensure the sausage is broken up pretty good and fully coated, then add cheese, toss together before adding milk to bring it all together. They always seem to come out just right- I usually add a little extra milk.
So good and easy to make. I mistakenly used only 2 cups of cheese (mix of cheddar and pepper Jack) but they turned out fine. Added a dash of garlic powder and a bit more milk than called for. Used Jimmy Dean sage sausage. Scooped with my smallest ice cream scoop so 20 minutes was perfect bake time. A new favorite recipe for sure!
I have made these for many years as one of our Christmas Day treats. The milk is a new ingredient for me. It keeps the balls from drying out as fast and might also help homogenize the product, making it smoother and less chunky.
Can you freeze these? Raw or cooked?
I think you could do either way – if you do them raw, be sure to cook them all the way through before eating.
