Birthday parties, 4th of July block parties, backyard barbecues, pool parties, you name it—any summer celebration is the perfect excuse to make a Strawberry Jello Poke Cake. Top this it with a few fresh strawberries and this is sure to be one of your favorite poke cake recipes!

One of the best things about this strawberry Jello cake is how easy it is to whip up. You only need five simple, inexpensive ingredients, and about an hour of baking and cooling time. This is truly an effortless summer dessert that you’ll want to make over and over again!

Noteworthy Ingredients

This isn’t a complete list! Here you’ll find notes to help you make sure you start off with the right ingredients for your strawberry Jello poke cake.

  • White Cake Mix – Betty Crocker and Duncan Hines are my choice for tried-and-true cake mixes! You could also use strawberry cake mix for more berry flavor.
  • Strawberry Jello – I’ve never used sugar-free Jello for this recipe, so I suggest using regular. Although this is a strawberry poke cake, you can really use any flavor of Jello here!
  • Whipped Topping – It doesn’t get much easier than Cool Whip, does it? Homemade whipped cream is fantastic, but it will deflate during storage, while Cool Whip won’t.
  • Strawberries – Skip the lackluster frozen berries and buy a container of fresh, juicy strawberries.

How to Store

Cover the dish with plastic wrap or foil and refrigerate for 3 to 4 days; if you have smaller portions of leftovers, you can transfer them to an airtight container. This strawberry Jello poke cake can also be frozen for up to 2 months; let it thaw in the refrigerator before serving.

Strawberry Jello Poke Cake

Strawberry Jello Poke Cake is light and fluffy, filled with strawberry jello, and topped with Cool Whip for a delicious summertime treat!

Ingredients  

  • 1 box white cake mix prepared as directed
  • 1 cup boiling water
  • 1 box 4-serving size Jell-O strawberry-flavored gelatin
  • 1 container 8 oz Whipped Topping (Cool Whip)
  • 12 fresh strawberries cut in half

Instructions 

  • Heat oven to 350°F. Spray bottom of 13×9-inch pan with cooking spray. Prepare cake as directed on box.
  • Bake 28 to 32 minutes or until a toothpick inserted in center comes out clean. Cool on cooling rack 20 minutes.
  • In a medium bowl, pour boiling water on gelatin and stir until dissolved.
  • Add holes to cake with the of a wooden spoon.
  • Carefully pour strawberry gelatin evenly over top of cake. Cool completely
  • Spread whipped topping over cake.
  • Add strawberries to the top of each piece of cake before serving.

    I accidentally put the sweet condensed milk on top of the cake after I poked it and put the Jell-O in and it turned out delicious and also followed it with the cool weapon. Of course the strawberries on top you should give it a try. It’s really good.
