Equipment

  • 8x4 loaf pan
  • Large mixing bowl
  • Fork
  • Measuring cups
  • Rubber spatula
  • Ingredients

Ingredients

  • 4 ripe bananas
  • 2 eggs
  • ¾ cup light brown sugar
  • 1 ½ cups self-rising flour

Instructions

  • Preheat your oven to 350ºF. Spray a loaf pan with baking spray and dust the pan with flour.
  • Add the bananas to a large mixing bowl. Mash them well with a fork so there are no large pieces. A few smaller pieces are okay!
  • Add the eggs and whisk them into the bananas with the fork.
  • Add the sugar and self-rising flour and mix everything together well to form a thick batter.
  • Pour the batter into the prepared loaf pan and spread the batter evenly in the pan.
  • Bake the banana bread for 50 minutes. The banana bread will be pulling away from the edges of the pan and a toothpick inserted into the center on the bread will come out cleanly.
  • Let the banana bread cool for about 15 minutes in the pan then flip it out onto a cooling rack. Slice and enjoy!

Notes

You can also slice a 5th banana the long way, cutting it into three long strips. Place the strips on top of the batter in the loaf pan before baking. This is an easy way to make the banana bread look nice!
