  • Baking sheet tray
  • Parchment paper or silicone baking mat
  • Rubber spatula

Ingredients

  • 1 box  (15.25 ounces) lemon cake mix
  • 2 cups Cool Whip, thawed
  • 1 egg
  • 1/2 cup powdered sugar

Instructions

  • Preheat your oven to 350 degrees F. Prepare a baking sheet tray with parchment paper or a silicon baking mat and set the tray aside.
  • In a medium-sized bowl, mix the lemon cake mix, Cool Whip, and egg together. Stir well to make a smooth batter.
    1 box  (15.25 ounces) lemon cake mix, 2 cups Cool Whip, thawed, 1 egg
  • Place the powdered sugar in a separate bowl.
    1/2 cup powdered sugar
  • Use a tablespoon-sized cookie scoop to scoop the cookie dough into the powdered sugar, scooping one cookie at a time and rolling it in the powdered sugar. Place the sugared cookie dough onto the prepared sheet tray, spacing them about 1 ½ inches apart. Repeat with all of the cookie dough.
  • Bake the cookies for 8 minutes. They will no longer look wet and the edges will just be turning golden brown. Cool the cookies on a cooling rack, and then enjoy!
