Ritz Cracker Chicken Casserole Recipe

Equipment

Ingredients

  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 3 cups shredded rotisserie chicken
  • 2 sleeves Ritz Crackers, crushed
  • 1/2 cup butter, melted

Instructions

  • Preheat your oven to 350ºF and grease a 9x13 baking dish with cooking spray.
  • In a large bowl, combine the condensed soup, onion powder, sour cream, pepper, and shredded chicken. Mix well.
  • Pour the filling mixture into the prepared baking dish and spread it in an even layer across the bottom of the dish.
  • In a separate medium bowl, combine the crushed Ritz crackers and the melted butter. Mix until the crackers are all coated in butter, then sprinkle the topping over the casserole.
  • Bake the casserole, uncovered, for 25-30 minutes. The topping will be golden brown and the casserole will be bubbling around the edges.
  • Scoop and serve the casserole while warm!

Notes

  • Add 2 cups of chopped broccoli florets to the casserole mixture to add a healthy veggie to the dish. 
  • Cooked, chopped chicken breast will also work in place of shredded rotisserie chicken. 
  • Add 2 cups chopped, frozen green beans to the casserole mix to make a tasty green bean chicken casserole. 
  • Add ½ cup shredded cheddar cheese to the cracker topping for a cheesy casserole twist. 
  • Use ½ cup sour cream and ½ cup cream cheese for an even richer filling.
