- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 3 cups shredded rotisserie chicken
- 2 sleeves Ritz Crackers, crushed
- 1/2 cup butter, melted
Preheat your oven to 350ºF and grease a 9x13 baking dish with cooking spray.
In a large bowl, combine the condensed soup, onion powder, sour cream, pepper, and shredded chicken. Mix well.
Pour the filling mixture into the prepared baking dish and spread it in an even layer across the bottom of the dish.
In a separate medium bowl, combine the crushed Ritz crackers and the melted butter. Mix until the crackers are all coated in butter, then sprinkle the topping over the casserole.
Bake the casserole, uncovered, for 25-30 minutes. The topping will be golden brown and the casserole will be bubbling around the edges.
Scoop and serve the casserole while warm!
- Add 2 cups of chopped broccoli florets to the casserole mixture to add a healthy veggie to the dish.
- Cooked, chopped chicken breast will also work in place of shredded rotisserie chicken.
- Add 2 cups chopped, frozen green beans to the casserole mix to make a tasty green bean chicken casserole.
- Add ½ cup shredded cheddar cheese to the cracker topping for a cheesy casserole twist.
- Use ½ cup sour cream and ½ cup cream cheese for an even richer filling.
