- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 packet ranch seasoning
- 1 can black beans 15 oz, drained and rinsed
- 1 kidney beans 15 oz, drained and rinsed
- 1 can corn kernels 15 oz, drained
- 1 Rotel tomatoes 15 oz, undrained
- 1 can diced tomatoes 15 oz, undrained
Optional Toppings
- Shredded cheese
- Sour cream
- Tortilla chips
- Diced avocado
- Chopped green onions
Brown the Beef. In a large pot, brown the ground beef over medium-high heat until fully cooked, about 5-7 minutes. Drain any excess grease from the pot.
Sprinkle the taco seasoning and ranch dressing seasoning over the browned beef. Stir well to coat the beef with seasoning.
Add the black beans, kidney beans, corn, Rotel tomatoes, diced tomatoes (with their juice). Stir to combine. Cover the ingredients with water.
Bring to a simmer. Reduce the heat to low and let the soup simmer for 20-30 minutes, stirring occasionally. This allows the flavors to blend beautifully.
Ladle the soup into bowls and add your favorite toppings like shredded cheese, sour cream, tortilla chips, or diced avocado for extra flavor and texture.

Ingredients *1 lb ground beef * 1 ounce package hidden valley ranch dressing mix * 1 ounce package taco seasoning mix * 16 ounce can pinto beans * 16 ounce can black beans * 16 ounce can whole kernel corn * 8 ounce can diced Mexican-style tomatoes * 8 ounce can diced tomatoes * 16 ounce can kidney beans Instructions Brown meat in skillet and drain. Add meat to slow cooker and add in ranch dressing and taco seasoning into meat. Add all of the remaining ingredients to the slow cooker and stir. Fill with water until the water just covers the ingredients. Stir well again. Cover and cook on high heat for 1-3 hours. Can also be made on the stove top and simmered for 1 hour.
